Apple Cobbler with Crumbs



My guest love to have this apple cobbler serve with a scope of fudge brownie on the bottom, drizzle a layer of chocolate ganache, top it with the apple cobbler with crumbs, a scope of vanilla ice cream on top, and last but not least, drizzle some caramel with roughly chopped nuts. Bon Appetit!
Crumbs:
·         1 stick Unsalted Butter, melted and keep warm
·         1/3 cup Granulated Sugar
·         1/3 cup Dark Brown Sugar
·         ¾ teaspoon Cinnamon
·         1/8 teaspoon Salt
·         1 ¾ cups Cake Flour
Apple Fillings:
·         4 Granny Smith Apples, peeled, cored and sliced ½” thick
·         ½ stick Unsalted Butter, melted
·         2/3 cup Light Brown Sugar
·         2 tablespoon Cornstarch
·         1/3 cup Orange Juice
·         ½ teaspoon Cinnamon
·         ¼ teaspoon Ground Nutmeg
·         Vanilla Ice Cream (optional)
·         Caramel (optional)
·         Chopped Nuts of your Choice (optional)
Instructions:
Crumbs:
1.       Whisk sugars, cinnamon, salt and butter in a medium size bowl.
2.       Add cake flour and stir with a spatula until mixture resembles thick cohesive dough
3.       Set aside to cool to room temperature
4.       When ready to top apple filling, use both hands to break the dough. If crumbs are too small or loose like brown sugar, try rolling the crumbs to form any size crumbs you like.

Apple Fillings:

1.       Use 8”x8” square baking dish, and adjust oven rack to the lowest position and pre-heat oven to 375 degrees.
2.       Peeled, cored and cut apples to ½ inch thick
3.       Melted butter in a skillet, add apples and cook stirring a couple of times until apples begin to caramelize about 4-6 minutes,
      Do Not Fully Cook Apples as it will continue to cook in the oven.
4.       Add brown sugar and continue to cook until brown sugar dissolved and apples are coated. Transfer to a baking dish.
5.       Whisk cornstarch and orange juice together until smooth, pour mixture over apple filling.
6.        Add cinnamon, ground nutmeg and stir until apple filling is coated.
7.       Sprinkle crumbs on top, distribute it evenly, bake 25 - 35minutes until crumbs are golden brown.
8.       Serve warm with a scoop of vanilla ice cream on top, drizzle w/ caramel & sprinkle with roughly chopped nuts.
